Yoghurt bacteria, SEM

Yoghurt bacteria. Coloured scanning electron micrograph (SEM) of bacteria (coloured) among the milk solids from a yoghurt. There are rod-shaped bacteria (bacilli, brown) and chains of spherical bacteria (cocci, round). Two common bacteria found in yoghurts are Streptococcus thermophilus and Lactobacillus bulgaricus. They can be incubated at high temperatures to ferment milk in the making of yoghurt. Magnification: x4650 at 6x7cm size

EDITORS COMMENTS
This print showcases the intricate world of yoghurt bacteria. In this coloured scanning electron micrograph (SEM), we are granted a close-up view of the milk solids from a delicious bowl of yoghurt. The image reveals an array of fascinating microbial life, with rod-shaped bacteria (bacilli) in shades of brown and chains of spherical bacteria (cocci) in round formations. Among the diverse bacterial community found in yoghurts, two prominent species take center stage: Streptococcus thermophilus and Lactobacillus bulgaricus. These remarkable organisms play a crucial role in the fermentation process that transforms milk into creamy, tangy yoghurt. They thrive at high temperatures during incubation, breaking down lactose into lactic acid and giving yoghurt its distinct flavor and texture. At a magnification level of x4650 on a 6x7cm scale, this SEM image offers us an extraordinary glimpse into the hidden world within our beloved dairy product. It serves as a reminder that even something as seemingly simple as yoghurt is teeming with microscopic life forms that contribute to its creation. This stunning photograph not only highlights the beauty and complexity of these yogurt microbes but also emphasizes their significance in microbiology research. With its vibrant colors and meticulous detail, it invites us to appreciate the wonders unfolding beneath our very noses every time we indulge in a spoonful of creamy goodness.
