Yoghurt bacteria

Yoghurt bacteria. Coloured scanning electron micrograph (SEM) of the bacteria Streptococcus thermophilus (spherical) and Lactobacillus bulgar- icus (rod-shaped) in live yoghurt. S. thermophilus are Gram-positive bacteria that often form chains as seen here. These thermophile bacteria are capable of living at the high temperatures of 50- 65 degrees Celsius. L. bulgaricus are Gram- positive bacteria that grow in acid media and produce lactic acid from the fermentation of carbohydrates. Both of these bacteria are used in the manufacture of yoghurt. They are added to milk and incubated at a high temperature to produce yoghurt. Magnification: x4, 375 at 6x7cm size

EDITORS COMMENTS
This print showcases the intricate world of yoghurt bacteria. In this coloured scanning electron micrograph, we are granted a glimpse into the microscopic realm of Streptococcus thermophilus and Lactobacillus bulgaricus, two essential components in live yoghurt production. The spherical S. thermophilus bacteria can be observed forming chains, a characteristic trait of these Gram-positive organisms. Fascinatingly, they possess the remarkable ability to thrive at high temperatures ranging from 50 to 65 degrees Celsius. Accompanying them are rod-shaped L. bulgaricus bacteria, also Gram-positive and known for their growth in acidic environments. These microbes play a crucial role in yoghurt fermentation as they convert carbohydrates into lactic acid. Both types of bacteria depicted here contribute significantly to the manufacturing process of this beloved dairy product. Added to milk and incubated under specific conditions, they work harmoniously to transform it into creamy and tangy yoghurt. With an impressive magnification level of x4,375 at a 6x7cm size, this image offers us an extraordinary close-up view that highlights the intricacy and beauty present within these microorganisms. Captured by Science Photo Library's skilled photographers specializing in bacteriology and microbiology, this print serves as a reminder of the hidden wonders that exist all around us – even within our favourite foods like yoghurt!
