Egg chemical reaction, 19th century
Egg chemical reaction. The reaction uses hydrochloric acid which reacts with the calcium carbonate in the egg shell to produce the white foam seen here (due to the carbon dioxide produced). This gives rise to the name given to this party trick of snowy egg. Eventually, the shell is completely removed by the acid, and the egg protein albumin turns white as it is denatured. Artwork from the eighth volume (second period of 1891) of the French popular science weekly La Science Illustree

EDITORS COMMENTS
This print showcases an intriguing 19th-century egg chemical reaction. The photograph captures the mesmerizing transformation of a simple egg through the use of hydrochloric acid. As the acid reacts with the calcium carbonate in the delicate shell, a spectacular white foam emerges, caused by the release of carbon dioxide. This enchanting phenomenon earned it the name "snowy egg" making it a popular party trick back in its time. The artwork originates from La Science Illustree, a renowned French popular science weekly publication dating back to 1891. It beautifully illustrates this historical experiment conducted in laboratories or even homes during that era. The image not only highlights the scientific aspect but also serves as a testament to human curiosity and experimentation. As time progresses, we witness how the acid completely dissolves away the shell while simultaneously denaturing albumin, resulting in its striking white coloration. This visual representation offers us a glimpse into early chemistry practices and reminds us of our continuous quest for knowledge throughout history. Through this monochrome depiction, we are transported to an era where scientific discoveries were celebrated and shared through publications like La Science Illustree. This remarkable photograph encapsulates both artistry and scientific exploration within its frame, leaving viewers captivated by its historical significance and beauty alike.
