The press on the left is operated by a team of horses, their powerful limbs straining against the wooden yoke as they turn the grinding wheels. The cane is fed into the mill through a chute, where it is crushed between heavy rollers to extract its juice. The resulting liquid is then transported to the adjacent mill for further processing. The mill on the right, however, relies on the power of water to do its work. A stream flows into a channel, turning the mill's overshot wheel, which in turn grinds the cane juice into crystallized sugar. The labor-intensive process of sugar production was a crucial aspect of the agricultural industry in the French West Indies during this time, with sugar cultivation and manufacture providing a significant economic boost to the region.
