This stunning handcoloured steel engraving depicts the Foxtail Millet or Italian Millet, Setaria italica, a vital crop in many parts of the world. The Foxtail Millet is also known by its alternative names, Panicum germanicum and Moha de Hongrie. Originally native to Africa, this millet has been cultivated for over 5,000 years and is now widely grown in Asia, particularly in China, India, and Bangladesh. It is a small annual plant, growing to a height of around 1 meter, with long, slender panicles that resemble the tails of foxes, hence the common name 'Foxtail Millet'. The grains of Foxtail Millet are small, round, and white or yellowish in color. They are rich in nutrients, including protein, dietary fiber, and various essential minerals. The grain is commonly used in making porridge, bread, and beer. In some parts of India, it is also used as a substitute for rice.
