Step back in time to the early 1900s in Pulque, Mexico, as we witness the traditional process of harvesting and producing this ancient fermented beverage from the heart of the maguey or agave plant. Maguey plants, also known as agaves, have been a vital part of Mexican culture for centuries. The sap of the maguey plant, when fermented, creates a unique and distinctive beverage known as pulque. This photograph captures the dedication and skill of the local farmers as they carefully harvest the ripe maguey hearts, using machetes to cut them from the base of the plant. The production of pulque is a labor-intensive process that requires a deep understanding of the maguey plant and the fermentation process. Once the hearts have been harvested, they are transported to a tasting room or "tuna," where the sap is collected and allowed to ferment in large clay jars called "tunas de barro." The fermentation process can take several days, during which time the farmers carefully monitor the progress, tasting the pulque regularly to ensure the perfect balance of sweetness and tanginess. Pulque has a rich history in Mexico, dating back to pre-Columbian times. It was a staple beverage for the Aztecs and other indigenous peoples, and was believed to have various medicinal properties. Today, while commercial production of pulque has increased, the traditional methods of harvesting and producing this unique beverage continue to be practiced in rural communities throughout Mexico.
