Amaranthaceae, also known as the amaranth family, is a diverse and fascinating group of plants. In Tab Xiii of Album IV, we find Beta vulgaris, commonly known as spinach beet. This nutritious vegetable is a member of the Amaranthaceae family and can be found on Page 156. One striking artwork from c. 1803-06 showcases Amaranthus Blitum in watercolor, pen, ink, and pencil.
