Good King Henry

EDITORS COMMENTS
- Chenopodium Bonus-Henri, 1905 This photograph, taken in 1905, showcases the regal beauty of the edible herb, Chenopodium Bonus-Henri, also known as "Good King Henry." This historical plant, with its rich, green foliage and distinctive, conical shape, once held a significant place in medieval European gardens and kitchens. The "Good King Henry" was a popular cultivar during the Middle Ages, particularly in the gardens of Henry IV of England, who is believed to have given the plant its name. The plant's common name, "Good King Henry," is a testament to its esteemed status as a valuable food source during a time when reliable and nutritious provisions were essential. The Chenopodium Bonus-Henri is a member of the goosefoot family, Chenopodiaceae, and is native to Europe and western Asia. It is an herbaceous perennial that grows to about 30 cm (12 inches) tall and boasts attractive, lobed leaves that are rich in iron, calcium, and vitamin C. The plant's tender shoots and young leaves are edible and have a mild, slightly sweet, and nutty flavor. In the Middle Ages, "Good King Henry" was often used as a green vegetable, and its leaves were cooked and eaten in various dishes, including pies, soups, and salads. The plant's seeds were also harvested and roasted as a coffee substitute or ground into flour for baking. This photograph, taken over a century ago, offers a glimpse into the past and reminds us of the rich history and culinary significance of the "Good King Henry," a plant that was once a cherished staple in medieval European gardens and kitchens.
