Pasteurising machine, 19th century
Pasteurising machine. This machine is designed to heat liquids to a high temperature and then cool it. This method of food preservation slows microbial growth and is known as pasteurisation (after Louis Pasteur). This design is by a Paris manufacturer called Houdart, who used a temperature of 59 degrees Celsius. The design was presented to the French Academy of Sciences and adopted by the military to use on wines for the French army. Artwork from the ninth volume (first period of 1892) of the French popular science weekly La Science Illustree

EDITORS COMMENTS
This print showcases a groundbreaking invention from the 19th century - the Pasteurising machine. Designed by Houdart, a renowned Paris manufacturer, this ingenious device revolutionized food preservation techniques. The machine's primary function was to heat liquids to an elevated temperature and then rapidly cool them down. This process, known as pasteurisation in honor of its pioneer Louis Pasteur, effectively hindered microbial growth and extended the shelf life of perishable goods. The diagram depicted in this artwork illustrates the intricate inner workings of this technological marvel. With precision engineering, Houdart's design utilized a temperature of 59 degrees Celsius to achieve optimal results. Its success was so remarkable that it caught the attention of esteemed institutions like the French Academy of Sciences. Interestingly, beyond its scientific significance, this innovation found practical application within military circles as well. The French army adopted Houdart's pasteurising machine for preserving wines intended for their troops. This endorsement further solidified its reputation as an indispensable tool in ensuring food safety during long campaigns. Captured from La Science Illustree, a popular science weekly publication in France during that era, this historical artwork offers us a glimpse into an important milestone in food industry history. It serves as a testament to human ingenuity and our relentless pursuit of advancements that improve our lives through technology and innovation.
