In the heart of Tierra Caliente, a region known for its scorching heat and vibrant culture, lies a kitchen that tells the story of tortillas. As I journeyed through Mexico in 1875, guided by Thomas Mayne Reid's words, I witnessed the artistry and tradition behind this beloved staple. One image captured my attention: "Making and baking tortillas in Yucatan. " The lithograph depicted skilled hands effortlessly patting dough into perfect circles before placing them on a hot comal. The aroma of freshly cooked tortillas filled the air, transporting me to this enchanting corner of Mexico. Another photograph showcased a historic moment frozen in black and white: a mother with her young daughter rolling grist by hand to make tortillas in El Salvador circa 1920. Their determination mirrored generations past who had passed down this age-old technique from one strong woman to another. A prawn and spinach frittata wrapped carefully in aluminum foil hinted at the versatility beyond their traditional form. Whether used as an edible vessel or transformed into delectable dishes like tacos, these thin rounds held endless possibilities. The Mexican Tortillera caught my eye; she skillfully weaved straw mats while simultaneously preparing fresh tortillas. In Aguas Calientes, Mexico, William Henry Jackson's lens captured locals preparing tortillas with utmost care. Each step was executed meticulously - from kneading the dough to pressing it onto the comal - honoring centuries-old techniques that have stood the test of time. And what better way to savor these golden discs than with guacamole? A plate adorned with folded tacos filled generously beckoned me closer. The combination of warm tortilla shells embracing creamy avocado dip created an explosion of flavors that danced on my palate.
